CHERRY AND GIN SOUR

There’s nothing particularly wild about this cocktail – except for how ridiculously tasty it is. I had a jar of Opies cherries in kirsch sitting in my cupboard, so I figured it was about time I put them to good use. You can use whatever alcohol you like, but I went with Hepple Gin, which is actually made with wild juniper in Northumberland, so I guess there is a little touch of wild in there after all. You may need to make this in two batches unless you have a very large cocktail shaker.

Ingredients

  • 8 black cherries in kirsch with 100ml of the liquor 
  • juice of 4 lemons
  • 200ml gin
  • whites of 2 large eggs

Method

Step 1

Half fill a cocktail shaker with ice then add 8 black cherries in kirsch with 100ml of the liquor, juice of 4 lemons, 200ml gin and whites of 2 large eggs, and shake until frothy. 

Step 2

Place 2 cherries in each glass or skewer them on to cocktail sticks and balance them on the glasses. Strain in the cherry sour.
