THE SIMPLE SHORTBREAD COOKIE RECIPE THAT TAKES TWO MINUTES TO COOK

It's all too easy to open a packet of biscuits and gobble the lot in one sitting. Thankfully, an Instagram baker has shared her simple recipe for a scrumptious cookie that serves just two people.

Cakeontherun's chocolate chip shortbread cookie requires just a few basic ingredients and takes a mere two minutes to cook in a microwave. Following her instant birthday cake recipe and one-minute trifle, this creation is just as quick, easy and delicious.

You can use milk, dark or white chocolate chips in the mixture. But if you don't have chips to hand, simply break off a chocolate bar into small chunks.

Similarly, if you avoid dairy in your diet or are vegan, choose milk-free chocolate and vegan butter, now widely available in most UK supermarkets.

Shortbread cookie recipe (serves 2)

Ingredients

  • 50g plain flour
  • 60g butter
  • 25g icing sugar
  • 20g cornflour
  • 1 tbsp chocolate chunks
  • 1 tsp vanilla essence

Method

  1. Put all of the ingredients except chocolate and vanilla in a bowl and mix together until it resembles breadcrumbs
  2. Add vanilla and chocolate and lightly bring them together to form a dough ball (add more flour if it’s too wet or more butter if it’s too dry)
  3. Tip out onto a lightly floured plate and gently knead into a circle
  4. Microwave on high for two minutes
  5. Once cooked, leave to cool for five minutes. Drizzle with chocolate sauce (optional).

Make it gluten-free - use gluten-free plain flour and a pinch of xanthan gum.

Make it vegan - use vegan butter and dark chocolate.
