AFRICAN PEANUT SOUP: A WARM EMBRACE FOR COLD DAYS

When the temperature drops and frost greets us in the morning, warming, delicious soups become favoured once again. Instead of reaching for cucumber soup or broth, I prepare a large pot of African peanut soup.

This soup is creamy, thick, and satisfying, and the addition of peanut butter gives it a unique flavour. With tomatoes and aromatic spices, you'll find it hard to resist a second serving. This soup will warm you up perfectly after coming home and is sure to bring a smile to your face.

African peanut soup surprises with flavour

The world of soups is full of possibilities, flavours, and unique combinations, so it's worth stepping out of your comfort zone and trying something new. African peanut soup is a delicious dinner recipe that will impress your loved ones. You can prepare it as a vegetarian dish or add chicken.

The heart of this African soup is peanut butter. It’s best to choose one made solely from nuts, without added fats, preservatives, or salt. If you have a good blender at home, you can make it yourself using peanuts. Fortunately, more shops are offering ready-made peanut butter with good ingredients.

Ingredients:

  • 1 large onion
  • 2 garlic cloves
  • a piece of ginger
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chilli powder
  • 1 can diced tomatoes
  • 950 ml vegetable or chicken broth
  • 250 ml peanut butter
  • salt and pepper to taste
  • juice of 1 lime
  • fresh coriander leaves for serving
  • peanuts for garnish

Preparation:

  1. Sauté the chopped onion and pressed garlic in hot oil.
  2. Add cumin, grated ginger, coriander, and chilli, and sauté for a while. Adjust the amount of chilli to your preference.
  3. Add the canned tomatoes, broth, peanut butter, salt, and pepper.
  4. Cook over medium heat for about 15-20 minutes, until the soup thickens.
  5. Blend the soup until smooth. If the soup is too thick, add a bit more broth.
  6. Season the soup with lime juice and sprinkle with fresh coriander and crushed peanuts. Serve hot.

If you want to prepare the soup with chicken, sauté it in a separate pan and add after blending. You can also add puff pastry peas or chickpeas. Enjoy!
