A successful chef who wowed customers at a pop-up residency in Rusthall, is poised to open a permanent restaurant in Tunbridge Wells. Robin Read ran The Counter at the popular Daily Bread in the High Street for several months at the end of last year.
It was fine dining with a set tasting menu with produce sourced locally. The chef wants to open a restaurant in Calverley Road with 24 covers.
The planning and design statement submitted to Tunbridge Wells Borough Council, said the restaurant would create an "intimate and unique dining experience" in Tunbridge Wells.
It said "it has the promise of being a venue which the town can be proud of". When Robin opened The Counter, the website gave an interesting insight into his career, which has seen him work and train alongside Nico Ladenis and Marco Pierre White, and being part of the teams retaining Michelin Stars for Chez Nico and Mirabelle Restaurants.
His passion for cooking started at 16 and he first completed work experience with the Roux Brothers in their London patisserie where he trained in 1990. His love and passion of the industry continued to grow from there.
The site for the new restaurant in Tunbridge Wells is the ground, first and second floor of 77 Calverley Road (left of the picture) along with the basement, and the basement of 79 Calverley Road (right of picture). The application is to make internal and exterior changes to the building, including adding kitchen extraction equipment.
